Wife went and filed MFS with kids, husband has not filed yet. Now they have decided to file MFJ. I'm amending hers, but doing an original on his. How do I handle? what forms, and how is this explained?

You amend hers to include his information. Form 1040-X. That's all.
Her info as originally filled will be in column A. His info and any resulting changes in B. Final numbers in C will be what an original MFJ return would've been. And now is! You'll include any forms that are "new" to her return or changed by the new information, such as if he had interest and dividends but she did not, then now there's a Schedule B, or a changed B to include his info.

Also, perhaps neither had Sch. B because the totals were under $1500, but combined they are, so you'll need to send the new Sch. B.
Anything with numbers that change should be sent, even if they don't affect the bottom line. For example, 8812 might produce the same result but will have different numbers in the middle.
