I think a Toyota Highlander as a gross vehicle weight of 6,000 lbs. Does anyone know this for sure?

it actually depends
on the trim level and drive train. All the 4WD's (except the base Hybrid) are 6000 exactly. All the 2WD's appear to be right at 5800. If you want documentation, the link below should help.

Anyone ever notice they beat the daylights out of the definition of a child, but they don't spend much time at all defining "parent"?

Weight
I didn't know weight was on a NC Registration (the only kind I have seen) but I certainly cannot say that it is not. I think it is also on a metal plate on the inside of the driver's door and on the cars I have seen it is usually viewed as you look down at where you step or as you look to the back of the vehicle.

Gross Vehicle Weight
I have to say, I have a California, Colorado and a North Carolina Registration in front of me and I do not see the weight of the Vehicle listed. . Nor did NCDOR ask for it when we applied for the NC Registration.
Erchess is right, there is a little tag on in the inside of the driver door that should provide the weight.
Otherwise try Edmonds.com, it takes a little to find it, but you can find almost any spec on any vehicle. Example: 2008 Toyota Highlander Ltd, FWD has GVW at 5800 lbs.
